Sunday, Bread Again

I have good news identical to the bad news: The bread is so delicious that the family can't stay away from it.

My loaves got a little burned, but that is a timing issue. The second one is just a little doughy on the bottom, and that's another timing issue. The dough's still stiff and hard to manage, so for the final experiment, I am in mid-process of an 80% hydration batch with the chia soaking.

I'm also using some metal tins for my loaves when I get around to baking them.

Things I have learned:

  • Two scales are better than one when dividing the prepped dough
  • Tuck and tighten the dough before shaping for the loaf pan
  • Preheat the dutch oven while the loaf is rising in the incubator for the FULL four hours
  • Keeping the dough in a REALLY cold fridge helps immensely for the entire waiting process.

It also helps that a fibrous sourdough takes extra hours to do its thing.

I now have one less side project to devour my time. I might try focussing on the pitch kits since they are the biggest pain in my butt.

Plus my pitch kits are for more than one book so it's going to be carrying on for some significant time.

It all depends on how I feel about it this coming week. There's lots of side projects and more opportunities to do a thing.

I'll be baking the bread I'm making tomorrow. All the proofing happens today.

Saturday, Parkrun and Bread

Finally home, I have acquired a second kitchen scale and dividing the dough was a lot easier than my last efforts.

Thursday, All New Fuckups

I had PLN'd to get Mayhem to the train station by nine so he could catch the train that would let him get to job training in good time.

Pity for me that waking up to arrive mere minutes to the train's arrival is counterproductive to the thought processes of Mayhem. So he missed the train and I had to drive him down. Again.

We have a PLN in place to not mess up that badly again, tomorrow. Yay, I guess.

Wednesday, Wordpress and Training

Mayhem's off on job training today. We quickly worked out that he can take the train most of the way home so that's a win. Morning traffic is a grind.

I've measured out everything but my Starter, which is currently incubating in preparation for the autolyse. I have 170g of chia soaking in 800g of water for the duration.

Monday, Tale Foundry, Meds, and Breads

I need to go forth and get some Ashwagandha today. I'm down to the bottom of the jar.

I'm also almost out of my homemade bread so tomorrow is Bread Day.

This experiment will include:

  • 170g chia (soaked in the water)
  • 830g wholemeal flour
  • 800g water

I will also be weighing the split dough at the end and thereby have plausibly more even loaves.

Sunday, Snuggles and Stuff

I re-ordered my schedule to spend more time with my lovely and...

She woke me up at midnight and kept making enough noise to keep me intermittently awake until I had to get up at 4AM. Thanks, love. I really didn't need that.

Plus, when I purposely gave off from everything else just to spend time with her in the morning... she was asleep. -_-
